Äkau Bowl with Icelandic salmon

Ingredients

  • Ursprung Island Premium salmon fillet in portions (item no. 618348)
  • ASC Salmon Oil 'Lemon' (Art. No. 546077)
  • Rice
  • Edamame beans
  • Avocado
  • Spring onions
  • Wasabi
  • Soy sauce
  • Light and dark sesame seeds
  • Sushi mayo
  • Japanese sriacha sauce
  • Daikon cress

Preparation

Cut the Iceland Premium salmon fillet portions into approx. 1 to 1.5 cm cubes (approx. 350 g per portion). Place the raw salmon cubes in a homemade marinade made from salmon oil, soy sauce and finely chopped spring onion rings and leave to marinate in the fridge. Cook the rice according to the packet instructions and toast the light and dark sesame seeds in a pan. Then cut the avocado into cubes. To serve, first place the warm rice in a bowl, then add the edamame beans, the marinated salmon cubes and the avocado cubes on top. Top with the sushi mayoo, Japanese sriacha sauce and wasabi. Finish the bowl with the toasted sesame seeds. Cress, rolls of nori leaves or seaweed chips (all edible) can be used as decoration.
