The Seafood Academy: Your competence center for fish and seafood

Ongoing training and further education measures ensure that Transgourmet employees and customers are "up to date" when it comes to fish and seafood and can continuously expand their expertise. Both basic seminars and professional courses are offered.

Practice-oriented presentations, conducted by experienced specialists, offer insights into new maritime preparation ideas and trends and make staff in every area fit for successful and competent fish sales.

Factory tours offer the opportunity to take a look behind the scenes of fish processing in Bremerhaven. Everything is on offer in Bremerhaven, from sustainability, product knowledge and factory tours to the independent preparation of fish and seafood under supervision and subsequent tasting. Our Academy team will also provide a suitable supporting program.

THE ACADEMY

The "Seafood Academy" has been integrated into Transgourmet Seafood for training and further education purposes: The competence center has a modern kitchen and display counter area equipped with high-quality equipment. In the kitchen area, everything from convection ovens and deep fryers to griddle plates is available to conduct professional fish and seafood training courses for the company's own employees and customers. State-of-the-art display counters also visualize attractive presentation methods. A spacious conference room with up to 60 seats completes the Academy's functional range. Since the end of 2014, the company's own smoking oven has also complemented the attractive facilities of the company's own training academy.

CUSTOMER TRAINING / SEMINARS

Training courses, workshops and seminars for customers from the restaurant, hotel, catering and food retail sectors provide information on new fish and seafood trends: practical presentations by experienced specialists offer an insight into new maritime preparation ideas for out-of-home catering and prepare staff in retail and at fish counters for successful sales. Factory tours give customers the chance to take a look behind the scenes of fish processing. In addition to the theoretical knowledge imparted by our fish experts, seminar participants also have the opportunity to experience fish & seafood in practice.

Fish sommelier IHK

Become an expert in the field of fish!

Knowledge about fish and seafood is becoming increasingly comprehensive and cannot be taught in all its complexity in any of the professions related to fish. With the advanced training course to become a fish sommelier with an IHK qualification, the versatility of fish and seafood is addressed in its entirety.
The trained fish sommelier is an expert and advisor on all theoretical and practical questions relating to fish and seafood.
Depending on previous knowledge and the profession practiced or aspired to, the following goals may be given:

  • Having a head start in professional life
  • To deepen and supplement specialist knowledge, in-depth further training
  • To be able to offer competent and professionally sound advice
  • Optimize purchasing and / or preparation
  • to optimize the enjoyment for the guest

As a participant in this seminar, you will learn about the special features of fish as a foodstuff, from its production, processing and preparation to its recommendation to the customer. The training focuses on product knowledge, fish sensory analysis, quality testing and quality recognition. The seminar has a high level of practical sensory relevance. In self-study with prescribed reading, a considerable amount of theoretical product knowledge must be acquired for the written examination. Once you have successfully passed the exam, you will be able to immediately apply the knowledge you have acquired in your professional environment, giving you a head start in your career.

The advanced training course to become a fish sommelier with an IHK qualification is aimed at all interested persons who already have a sound and professional knowledge of fish and seafood.

Only people who already have many years of professional experience, the necessary theoretical knowledge and practical experience with fish and seafood can become fish sommeliers with an IHK qualification. The further training is aimed at "specialists" and "professionals" from the fish industry, specialist fish trade, fish wholesale, fish retail, gastronomy, fish & seafood quality assurance, specialist fish advice, fish nutrition advice, fish associations or fish farmers. Further training to become a fish sommelier with an IHK qualification also requires the necessary sensory skills (taste, smell, freshness and quality assessment). Intensive self-study in theoretical product knowledge is a prerequisite.

The project sponsor is Transgourmet Deutschland GmbH & Co. OHG with its Transgourmet Seafood Academy based in Bremerhaven. Cooperation partners are the Bremen Chamber of Commerce - IHK for Bremen and Bremerhaven, ttz Bremerhaven and FischMagazin.

26 participants will be selected from the group of applicants and, if necessary, waiting lists will be created. Applications are now open! You will receive feedback from FischMagazin as to whether you will take part in a course or whether you are on the waiting list.

Step 2

The selected participants will be reported to the secretariat of the Transgourmet Seafood Academy, Ms. Stefanie Nienaber. Further organization will then be carried out by Ms. Nienaber.
