The fish fair in Germany

fish international is the only trade fair for fish and seafood in Germany - a platform for the trade and gastronomy.
In Bremen, retailers find out about new products on the German market and get an overview of innovations and developments.

Concentrated fish expertise in Bremen

Bremerhaven/Riedstadt, February 2024

For more than 30 years, fish international - the only German trade fair for fish and seafood - has been the meeting place for the industry in Bremen. This year, from February 25-27, over 10,000 visitors from more than 50 countries came together to discuss fish, learn about new products and sample various specialties. Transgourmet Seafood showcased its expertise as the largest exhibitor on a stand area of over 500 square meters.

In cooperation with various partners from the delicatessen, baked goods and plant-based sectors, as well as with Transgourmet Fleischmanufakturen for delicious surf & turf creations, Transgourmet Seafood presented a wide range of new products such as white halibut and vegan tuna, Mediterranean and exotic specialties - including tastings, pioneering indulgence concepts and professional knowledge transfer.

Sustainable enjoyment with Transgourmet Ursprung

A special focus this year was on the products of the sustainable own brand Transgourmet Ursprung, which will be celebrating its 10th anniversary in 2024. To mark the occasion, the entire fish variety of the own brand was presented, including small snacks with organic bread from Parsdorf, Kaiser Felsenkeller cheese or Zillertal hay milk alpine cheese - naturally also from the Ursprung range. The core of the brand is outstanding culinary quality, paired with original, authentic product and producer stories as well as assured sustainability performance according to clearly defined and transparent criteria. Fish and seafood have a special place in this.

One of the projects close to his heart is the fish share, a crowdfarming project that was launched five years ago and where everyone can transparently track the journey from the water to the table. "This bridge from our farmers to our colleagues to our customers is something special. In today's world, we hardly get to know the people, their families and the stories behind them, which is why it is so important to me," says Sebastian Foßhag, Product Manager Transgourmet Ursprung. Interested customers can still purchase fish shares for this year until March 15.

Still on trend: sushi

Additional highlights at the Transgourmet stand were the sushi and sashimi hits in a wide variety of shapes and variations - a trend food for years and now also a firm fixture in German cuisine. Particularly important: the quality and freshness of the products, which together with finely tuned flavors and spices make the colorful rolls a real treat for the palate. The sustainable land salmon, newly added to the range, was also processed in this context. The fish are reared in an urban environment in a closed recirculation system fed directly from clean, controlled fjord water. Together with natural feed, this results in a high-quality and environmentally friendly product that is free from heavy metals or pharmacological residues.

TRANSGOURMET SEAFOOD FLIES THE FLAG

LARGEST EXHIBITOR AT FISH INTERNATIONAL 2018

Bremerhaven/Riedstadt, February 2018

Transgourmet Seafood (TGS), the Bremerhaven-based competence center for fish & seafood of the market-leading gastronomy specialist Transgourmet Deutschland (Riedstadt), will once again be by far the largest exhibitor at this year's "fish international". The only fish trade fair in Germany will take place from February 25 to 27, 2018 in Bremen and for the third time as part of the "Gastro Ivent".

In cooperation with various partners from the fish processing, delicatessen, baked goods, pasta, potato processing and other sectors, visitors to the 700 square meter TGS stand can look forward to a wide range of new products, including tastings, pioneering indulgence concepts and professional knowledge transfer.
The focus of the trade fair appearance will be an exciting "Streetfood Court", the presentation of the sustainable Transgourmet Germany own brand "Ursprung" including the presentation of numerous product innovations, the TGS Premium "Black Label range" and delicious smoked fish specialties. The presentation in the Hanseatic city will be rounded off by the official presentation of the "Fish Sommelier or Fish Sommelière IHK" certificate to the graduates of this professional training course initiated by TGS.

STREETFOOD TRUCKS IN THE FAST LANE

The topic of street food is on everyone's lips in the catering industry. A court with three trucks presents creative fish and meat products to enjoy on the go - including tastings. Vendors include the Alaska Seafood Marketing Institute (ASMI) and snack specialist "Salomon", which will be serving up selected burger ideas. A new streetfood folder from TGS also provides information on how streetfood can be implemented lucratively in restaurants and communal catering.

Origin: Sustainable from the region
It is becoming increasingly important to know where products come from and how and under what conditions they were produced. With its own "Ursprung" brand, Transgourmet Germany meets these three requirements: outstanding culinary quality, original producer stories and a guaranteed sustainability performance.
The entire breadth and depth of the TGS product range will be presented at the Ursprung own-brand stands. "In addition to high quality, our Ursprung products are intended to create greater awareness of food and its origin," says Jürgen Bergmann, Sustainability & Communication Manager at TGS.
Large fish bed
The large fish bed is an additional highlight of the trade fair. For example, fresh salmon and high-quality redfish, cod and rockfish fillets from Iceland, which are marketed under TGS's own "Black Label" brand, are skillfully presented.

FAIR NOVELTIES ORIGIN & SMOKED FISH
Origin/Reese

The Reese family business, the largest fish farming and fishing company in Schleswig-Holstein, presents numerous products from its own aquaculture and inland fishing under the Transgourmet own brand Ursprung, which are produced under sustainable and resource-conserving farming and processing conditions. Each product can be fully traced. At the same time, gentle aquaculture serves the welfare of the animal.

Ursprung/Hasetal Waller

With "Hasetal Waller", the entire breeding, production and processing comes from a single source. This allows full control over the breeding stock and its quality. Thanks to many years of experience and a deep sense of responsibility towards the living creature, the fish products meet the highest culinary and responsible standards.

Origin/African catfish

Everything takes place in regional aquaculture in Mecklenburg-Vorpommern, from young animals to rearing, production operations, processing and refinement. Sustainable and resource-conserving breeding and processing conditions are expressly taken into account. The African catfish has a unique meat quality, firm consistency and a mild taste.

EXTENDED RANGE OF SMOKED FISH

With its expanded range of smoked fish, TGS is reviving the good old days of traditional smoking. "Our partners are predominantly small smokehouses and smoked fish manufacturers who refine their products with a lot of love and many years of experience in traditional artisan production," explains Jürgen Bergmann. The products on display include Ursprung own-brand smoked fish, Hiramasa Kingfish, Grand Cru and Chef's Cut smoked salmon, smoked fjord trout, smoked fish convenience products and much more.
The product presentation at the trade fair will be complemented by innovative, sustainably produced salmon oils in four flavors and "Nutaaq" cod from Greenland.

FURTHER TRAINING TO BECOME A FISH SOMMELIER

Initiated by TGS and supported by the IHK Bremen/Bremerhaven, the Technologie-Transfer-Zentrum Bremerhaven (ttz) and FischMagazin, the Seafood Academy, which is part of TGS, offered professional training to become a fish sommelier/sommelière with an IHK qualification for the first time in Germany in 2017. The modular seminar comprises eleven different teaching and learning contents and is aimed at people who already have a sound and professional knowledge of fish and seafood.
The official presentation of the IHK examination certificates to the 23 graduates will take place on the second day of the fair, February 26, 2018 at 4 p.m., at the fish fair in a festive setting. Both training courses are already fully booked for 2018. (see extra PM)

ISLAND INTRODUCES ITSELF

Transgourmet Seafood is bringing a breath of fresh air to the market under the Black Label brand with a new focus on "Iceland Salmon, Fish Fillets & Loins".
Arctic farmed salmon from Iceland is a pure and healthy delicacy. Whole salmon, salmon fillets and premium salmon fillets in portions are available here.
The Iceland range also offers selected loins and fillets of cod, redfish, turbot, haddock, saithe and lingfish from responsible fishing. Further information in the attachment.

CUSTOMER SEMINARS AT THE TG SEAFOOD ACADEMY

The TG Seafood Academy is offering two exclusive events this year.
On the one hand, an expert workshop "Sustainability & Fish" on June 27 & 28, 2018 with over 10 speakers and a seminar with Heiko Antoniewicz on April 10, 20128 in Bremerhaven.

LARGEST EXHIBITOR AT FISH INTERNATIONAL 2016

TRADE FAIR HIGHLIGHT: STREETFOOD AND NEW REPACKAGING CENTER

Transgourmet Seafood (TGS), a company of Transgourmet Germany, was by far the largest exhibitor at this year's "fish international" trade fair from February 14 - 16, 2016 in Bremen, which took place for the second time as part of the "Gastro Ivent".

Together with well-known partners from the fish processing, delicatessen, baked goods, spices, pasta, potato processing and other sectors, the fish specialist will be presenting numerous classics, product innovations and concepts at its 600 square meter stand. 

One of the highlights at the stand was street food in all its variety. Visitors could look forward to imaginative products and delicious tasting opportunities. Against this backdrop, Bremerhaven-based TGS also presented its new 84-page street food folder: Attractively illustrated, it provides information on delicious recipes and shows how street food can be lucratively implemented in the catering, communal catering and food retail sectors.

Another focus of the trade fair was the new "Repacking Center in Bremerhaven" (UPZ). Presentation counters were used to show, for example, sea bream and sea bass, which are gutted at the UPZ. The repacking center's other main tasks include repacking large packs into small packs, packing imported tuna, checking and processing paddlefish and defrosting special products such as halibut fillets and more.

The management was full of praise for the commitment of the entire trade fair team.
